No-Bake Chocolate Blueberry Cups

Sweet and tarty fruits are my solution to almost no-bake dessert snacks. This chocolate blueberry cup is sweet, tarty, and just a little nutty. This one is so easy and quite fun to come up with that my daughter helped me melt the chocolate.


Blueberries carry all the healthy benefits of nourishing the body with folate, fiber, potassium, vitamin C, and vitamin B6. The phytochemicals in blueberries also help neutralize free radical damage, help prevent diseases, and effectively treat inflammation. Who knew such little berries could have such a big impact!

Hemp Seeds are moderately alkalizing nuts that contain high amounts of vitamin E, sodium, magnesium, phosphorus, potassium, sulfur, calcium, iron, and zinc. The shelled seeds of the hemp plant contain about 35 percent essential fatty acids and 33 percent plant protein. I almost daily get away with using about two tablespoons in any given dish as a topping or seasoning.


Chocolate is a contender all on its own albeit not quite as nutritious as the above-mentioned ingredients it does carry some benefits when there isn't lots of added sugar and animal milk added. I drizzled melted chocolate over the blueberries because it just seemed like a good idea at the time. You can substitute with a light dusting of organic cacao powder for the same chocolatey aroma but it won't have the same sweetness.



I'm a big fan of botanical powders and sprinkled just enough Butterfly Pea Flower powder on top just for the fun of food!




Ingredients


handful of blueberries

4 tbsp melted vegan chocolate chips

approx. 2 tsp shelled organic hemp seeds (topping)

sprinkle of pea butterfly flower powder (topping)





What to do


Lay half of your handful of rinsed blueberries in the bottom of a small dish. Using a teaspoon drizzle the melted chocolate on top of the blueberries. Layer the second handful of blueberries on top. Drizzle the remainder of the chocolate on top. Sprinkle on the Butterfly Pea Flower powder and top with the shelled hemp seeds.


Tip: If using the microwave to melt your chocolate chips use 15-second increments and stir the chocolate in-between warming sessions so it doesn't burn.


Future plans are to take this a step further and add some of my organic pumpkin seeds. If I'd had thought for a second longer they would have made the cut this time.
